Red Enchilada Sauce

Red Enchilada Sauce

Ingredients

1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon minced onion
2 1/2 teaspoons chili powder
1/4 tsp chipotle chili powder
1/4 teaspoon ground cumin
1 teaspoon dried parsley
1/2 teaspoon dried oregano
1/8 teaspoon ground black pepper
1/8 teaspoon salt
1/4 cup salsa
1 can tomato paste
1 1/2 cups broth

Heat the oil in a large saucepan over medium heat. Add the garlic and saute for 1 to 2 minutes. Add the chili powders and cumin and saute for 1 minute.  Add the onion, oregano, ground black pepper, salt, parsley, salsa and tomato sauce.

Mix together and then stir in the broth. Bring to a boil, reduce heat to low and simmer for at least 30 minutes, adding some water if needed.

Balsamic Onion Sauce

Balsamic Onion Sauce

Ingredients:

1/4 cup olive oil
1 medium onions, sliced thin
1/8 teaspoon salt
1/4 teaspoon pepper
1/4 cup sugar
1/2 cup balsamic vinegar

In a large frying pan heat oil over high heat. Add onions and lower the heat to medium. Add salt& pepper mix thoroughly. Sweat onions down for about 15 minutes stirring often. You want the onions very soft. Add sugar and reduce heat to low. Mix well & cook 5-10 minutes or until most of liquid is absorbed. Add balsamic vinegar. Mix well cook for 20-40 minutes until sauce becomes a dark rich syrup.

Enchilada Sauce

Enchilada Sauce

Ingredients:

1/2 cup diced red onion
1 tsp minced garlic
1/2 cup veggie broth
1 tbsp chili powder
1 tbsp honey
1 tsp cumin
1 28-ounce can crushed tomatoes

Heat oil in pan over medium heat. Saute onion and garlic 5 minutes. Toast spices 1 minute. Add remaining ingredients and simmer 30 minutes.
