Lentils Harira

Lentils Harira


1 small onions, chopped
1 tsp cumin
1 tsp ground ginger
1 tsp coriander
1/2 tsp paprika
1/4 tsp cinnamon
2 cups broth
1 cup green lentil (or brown)
2 tbsp tomato paste
2 tbsp lemon juice
1 cup frozen pea & carrots mix
1/2 cup diced dried apricots

Heat oil in a pan over medium heat. Add onion and cook until translucent. Add spices and toast 1 minute. Add broth through peas & carrots, bring to boil. Reduce heat. Cook 20 minutes. Stir in apricots. Serve.
