Roasted Tomato Baked Potato

Roasted Tomato Baked Potato

Ingredients:

1 baking potato, washed
2 tomatoes, quartered and cored
olive oil
balsamic vinegar
minced garlic

Preheat oven to 400 degrees. Coat potato in olive oil and put on top rack. Put tomatoes on a cookie sheet and drizzle with oil and vinegar. Top with garlic. Place on rack below potato. Bake for 45 minutes.
